What it is

Cardamom is the seed pod of Elettaria cardamomum, native to India and Sri Lanka. The pod is green when fresh, brown when dried. Inside are 8 to 16 small black seeds, the flavour-bearing part.

How to prep cardamom for cocktails

Crushed pod (the standard). Lightly crush 1 to 2 green cardamom pods with a muddler or back of a spoon. Drop into the mixing glass before stirring or shaking. The seeds release flavour fast.

Cardamom syrup. 10 crushed green pods + 250ml water + 200g sugar. Simmer 8 minutes, steep covered 30 minutes, strain. Keeps refrigerated 3 weeks.

Cardamom-infused gin. 8 crushed pods in 500ml gin. Cap, leave 24 hours, taste, strain.

Cardamom-bitters tincture. 15 crushed pods in 200ml high-proof neutral spirit. Steep 2 weeks. Use 2 dashes in any aromatic-bitter cocktail.
