Crucial: durian's smell is much stronger than its taste. A small amount in a cocktail provides flavour without overwhelming the bar with aroma. Aroma management is the actual technique challenge.

How to prep durian for cocktails
Puree (the standard). Take the seeded flesh from the pod (frozen works fine). Blend with a touch of water or cream. The result is the cocktail base. Use within 8 hours.
Durian cream. Whisk 60g durian puree with 60ml heavy cream. Use as a float on coffee cocktails.
Durian rum infusion. 100g durian puree in 500ml dark rum. Cap, leave 48 hours, strain through coffee filter. The rum picks up durian's flavour without the visible texture.
Ventilation matters. Open windows. Use a dedicated container. Plan your durian cocktail work for the end of the prep day so the bar can ventilate before service.
