How to prep mint for cocktails

Slap, do not muddle (the rule). Take a sprig of mint, place in your non-dominant palm, slap once firmly with your other palm. This bruises the leaves and releases the oils without breaking the cell walls that hold bitter compounds. Add to the drink.

Mint syrup. 50g fresh spearmint + 250ml water + 200g sugar. Bring to gentle simmer, take off heat, steep covered until cool. Strain. Keeps refrigerated 5 to 7 days.

Mint oleo-saccharum. Layer fresh mint leaves with sugar in a sealed jar. Leave overnight. Strain. The sugar pulls out concentrated mint oil. Use sparingly.

Mint-infused white spirit. 30g fresh mint in 500ml gin or vodka. Cap, leave 4 to 6 hours, taste, strain when right. Don't over-infuse.

Garnish. A bouquet of 4-6 spearmint sprigs in a tall glass, slapped before placing. The aroma hits with every sip.
