How to prep sage for cocktails
Sage syrup. 8 fresh sage leaves + 250ml water + 200g sugar. Simmer 6 minutes (no more, sage gets bitter), steep covered 30 minutes, strain. Keeps refrigerated 2 weeks.
Sage-infused bourbon. 6 fresh leaves in 500ml bourbon. Cap, leave 12-24 hours, taste, strain. Don't over-infuse.
Slap garnish. Slap a fresh leaf and float on the finished drink.
Smoke garnish. Pass a fresh sage leaf through a flame for 1-2 seconds; let it smoulder. Float on a bourbon or apple-coded drink.
