Why most decaf coffee in cocktails fails

Two reasons:

1. The cheap-decaf problem. Industrial decaffeination strips flavour along with caffeine. Cheap decaf coffee tastes muted, slightly chemical, and one-dimensional. A cocktail built on bad decaf reads as a hollow version of the real thing.

2. The "we don't really care" effect. Many bars treat decaf as an afterthought, brewing it weak, holding it old, serving it past its peak. The drinker tastes the lack of care immediately.

Decaffeination methods, ranked

Swiss Water Process (best): chemical-free, retains most flavour. Premium decaf beans use this method. Recommended for cocktail use.

CO2 supercritical: also chemical-free, very good flavour retention. Slightly cheaper, slightly less common.

Methylene chloride or ethyl acetate (skip): the cheap industrial methods. Flavour is significantly degraded. Avoid for cocktails.

Always check the label or ask the roaster. "Decaffeinated by [process]" should be specified.

Three decaf coffee cocktails worth pouring

1. Decaf Espresso Martini. Vodka (45ml), coffee liqueur (25ml), fresh decaf espresso pulled within 30 seconds (30ml), simple syrup (10ml). Shake hard. Double-strain. Same recipe as the standard, only the espresso changes. With Swiss-Water-decaf, indistinguishable from the caffeinated version.

2. Decaf Cold Brew Old Fashioned. Bourbon (45ml), cold-brewed Swiss-Water-decaf (15ml), demerara syrup (10ml), chocolate bitters (2 dashes). Stir over a large cube. Late-night nightcap that does not keep you up.

3. Decaf Espresso Martini "mocktail" (zero-proof). Skip vodka and coffee liqueur. Use decaf espresso, oat-milk cream, chocolate bitters, and a touch of vanilla syrup. Dry shake then hard shake. For pregnant guests or designated drivers wanting the Espresso-Martini moment.
