Vanilla is the cocktail ingredient that quietly improves almost any sweet build. A scraped half-pod in a syrup. A bar spoon of high-quality extract in a sour. A pod-infused rum. Vanilla works because vanillin, its main flavour molecule, sits at the centre of human "sweetness" perception.
What it is
Vanilla planifolia. A climbing orchid native to Mexico. The seed pod (vanilla bean) is harvested green, cured, and dried over months to develop the characteristic flavour. Madagascar (Bourbon vanilla) is the dominant producer; Tahitian vanilla (Vanilla tahitensis) is more floral; Mexican vanilla is rarer.
Vanilla forms for cocktails
- Whole bean: the best for cocktails. Split, scrape seeds, use both seeds and pod.
- Vanilla extract: seeds steeped in alcohol. Good for syrups, infusions, baking. Buy "pure vanilla extract", not "vanilla flavouring" (which is synthetic).
- Vanilla paste: seeds suspended in syrup. Convenient for cocktail use, more concentrated than extract.
- Vanilla syrup: pre-made, varies in quality. Read the label.
Flavour profile
Sweet, floral, creamy, with a warm round finish. Pairs naturally with: bourbon, rum, brandy, cognac, sake, anything dessert-coded. Companion ingredients: cardamom, cinnamon, chocolate, coffee, citrus, honey, gula melaka, butter.
Where to source vanilla in Malaysia
Whole pods: Cold Storage, Mercato, BIG, Bens stock Madagascar vanilla pods. RM 15 to 30 per pod.
Extract: any baking supply or Indian grocer.
Quality marker: pods should be plump, dark, slightly flexible, with a strong sweet aroma. Dry brittle pods are old.
How to prep vanilla for cocktails
Vanilla simple syrup. Split 1 vanilla bean lengthwise, scrape seeds. Combine with 250ml water and 200g sugar. Simmer 5 minutes, take off heat, leave to steep with pod and seeds for 30 minutes. Strain (or leave the bean in for ongoing infusion). Keeps refrigerated 3 weeks.
Vanilla-infused bourbon. 1 split pod in 500ml bourbon. Cap, leave 5 days, taste, strain.
Vanilla salt rim. Scraped vanilla seeds + sea salt + sugar. Use as a Margarita or sour rim.
Tahitian vanilla extract. Brew Tahitian for fruit-floral builds; Madagascar for caramel-richer builds. The cocktail will be different.
Best cocktails with vanilla
Vanilla Old Fashioned: bourbon, vanilla syrup, aromatic bitters, large rock.
Vanilla Daiquiri: aged rum, fresh lime, vanilla syrup. Tropical-coded.
Vanilla-Pear Martini: vodka, fresh pear, vanilla syrup, lemon.
Coffee-Vanilla Espresso Martini: vodka, espresso, kahlua, vanilla syrup.
Cardamom-Vanilla Hot Toddy: bourbon, hot water, vanilla, cardamom, honey, lemon.
Substitutions
- Vanilla extract for vanilla pod (about 1 teaspoon extract = 1 pod).
- Vanilla paste for extract (more concentrated, equal parts).
- Tonka bean for a more aromatic-complex alternative (use sparingly).

Frequently asked questions
What does vanilla taste like in cocktails?
Vanilla reads as sweet, floral, and creamy with a warm round finish. Madagascar Bourbon vanilla is the dominant caramel-rich profile; Tahitian vanilla is more floral and fruit-coded. The molecule vanillin sits at the centre of human sweetness perception, which is why vanilla quietly improves almost any sweet build.
Where can I buy vanilla in Malaysia?
Whole Madagascar vanilla pods at Cold Storage, Mercato, BIG, and Bens run RM 15 to 30 per pod. Pure vanilla extract (look for that label, not vanilla flavouring which is synthetic) is at any baking supply or Indian grocer. Tahitian vanilla is rarer and usually online or via specialty importers. Pods should be plump, dark, slightly flexible, with a strong sweet aroma.
What can I substitute for vanilla?
Vanilla extract for vanilla pod (roughly 1 teaspoon extract per pod). Vanilla paste for extract (more concentrated, equal parts). Tonka bean for a more aromatic-complex alternative (use sparingly because of natural coumarin). For pure flavour, the pod is best; for batching convenience, extract is fine.
Which cocktails use vanilla?
Vanilla builds on the bar include Vanilla Old Fashioned (bourbon, vanilla syrup, aromatic bitters), Vanilla Daiquiri (aged rum, lime, vanilla syrup), Vanilla-Pear Martini, Coffee-Vanilla Espresso Martini, and Cardamom-Vanilla Hot Toddy. Vanilla also appears as a quiet background in many of our gula melaka and kopi-O builds at Dissolved Solids.
How long does vanilla keep?
Whole vanilla pods keep 2 to 3 years in a sealed jar in a cool dry cupboard; the aroma slowly fades but never disappears. Pure vanilla extract keeps indefinitely. Vanilla simple syrup keeps 3 weeks refrigerated (or longer with the pod left in for ongoing infusion). Vanilla-infused bourbon keeps indefinitely once strained.
