Pacing the evening

Three rules for business drinks that work:

1. Two drinks maximum. Three only if the conversation is clearly extending naturally. A third drink at a business meeting usually means you have lost track of why you are there.

2. Match their pace. If they are sipping slowly, sip slowly. If they decline a second drink, decline yours. Reading your guest is more important than getting through the menu.

3. End cleanly. Two hours is the right business-drinks length. Three is the upper limit. Stand up when the bill arrives; do not linger past the natural end.
