The selection
Across both outlets we rotate 15-20 gins at any time. The core is:
- London Dry classics: Tanqueray, Beefeater, Bombay Sapphire, the baseline.
- Premium London Dry: Sipsmith, Plymouth, Tanqueray No. Ten.
- New Western style: Hendrick's, Monkey 47, The Botanist, Gin Mare.
- Navy Strength: Plymouth Navy Strength, Hayman's Royal Dock, for stronger cocktails.
- Local: select Malaysian-distilled gins when available, plus regional Asian gins (Roku from Japan, Sin Gin from Singapore).
- Old Tom: for historic recipes that ask for sweeter gin (Martinez, Tom Collins variations).
If you want to taste through a few gins to find what you like, ask for a "gin flight", three 15ml pours of contrasting styles, RM 45. Useful before committing to a full cocktail.
Gin cocktails we pour often
Classic G&T. Premium gin (your pick), good tonic (we use Fever-Tree or East Imperial), big ice cube, expressed citrus peel matched to the gin. RM 32-48 depending on the gin.
Martini, gin. Stirred very cold, served very cold. London Dry or a botanical-forward gin. Olive or twist. The drink that separates a cocktail bar from a lounge.
Negroni. Gin, Campari, sweet vermouth. Equal parts. The bitter cocktail that converts non-bitter drinkers if built right.
Last Word. Equal-parts gin, chartreuse, maraschino, fresh lime. Endlessly drinkable, slightly menthol, more interesting than it sounds.
Bee's Knees. Gin, honey syrup, fresh lemon. Prohibition-era. Gentle, citrusy, the best gin sour for someone who thinks they do not like sours.
Aviation. Gin, maraschino, crème de violette, fresh lemon. Floral, pale-purple, photographs beautifully.
