If you are building cocktails on iced lemon tea, brew the base from real tea leaves. Bottled product will not work.

The base recipe (kopitiam-style)

  1. Strong-brew 10g of Boh black tea (or Ceylon) in 400ml of just-boiled water for 5 minutes.
  2. Strain. Add 50g of sugar (or 80ml of palm sugar syrup) while still hot. Stir until dissolved.
  3. Cool to room temperature.
  4. Refrigerate. Lasts 4-5 days.

To serve as a non-cocktail drink: pour over ice with fresh lemon wedges, optionally with a sour plum.

Three cocktails built on iced lemon tea

1. Long Island Iced Tea (the kopitiam version). Vodka + gin + rum + tequila + triple sec, equal parts (15ml each), plus 30ml iced lemon tea base, plus 15ml fresh lemon. Build over ice in a tall glass. The classic Long Island with the kopitiam tea base instead of cola. Higher-quality, less sweet.

2. Whisky Iced Lemon Tea. Whisky (45ml), iced lemon tea base (90ml), fresh lemon juice (15ml), 1 asam boi muddled in. Build over ice in a tall glass. The Malaysian whisky highball. Drinks like a low-ABV punch.

3. Iced Lemon Tea Spritz (low-ABV). Iced lemon tea base (60ml), Aperol or Campari (30ml), top with soda. Build in a wine glass over ice. Garnish with a lemon wheel and a sprig of mint. A Malaysian-Italian fusion that works better than it should.

The asam boi connection

Adding a preserved sour plum (asam boi) to iced lemon tea is a small kopitiam tradition that translates beautifully to cocktails. The salty-sour plum amplifies the tea's tannin and the lemon's acid simultaneously.
