A no-menu cocktail bar does not print a list. The bartender does not hand you a card and wait for you to scan. They ask you three questions, listen to the answers, and build a drink in front of you that is calibrated to your palate, not to a printed-menu average. Soluble Solids at 50-1 Jalan SS2/24, Petaling Jaya is the established no-menu cocktail bar in PJ, with a wall of labelled infusion jars behind the bar and a small-room format that is built for the conversation the order itself becomes.

The three questions

Every order at Soluble Solids starts with the same three:

1. Strength: light, medium, or strong. Light means around 1 ounce of spirit topped long. Medium is 1.5 to 2 ounces, standard. Strong is 2.5 ounces, spirit-forward, served short. Pick light for early afternoon, medium for the default first round, strong for the third drink of the night.

2. Base spirit: gin, vodka, whisky, rum, tequila, mezcal, brandy, or surprise me. Pick the spirit you usually drink. Or pick the one you do not usually drink and want to explore. "Surprise me" works and is a real answer; the bartender will choose what fits the room and the energy.

3. Flavour profile: citrusy, herbal, smoky, sweet, savoury, floral, bitter, or tropical. Pick one. Pick two if you cannot decide. This question is the most useful because it lets the bartender match your palate without guessing.

From those three answers (and the room temperature, and the weather outside, and how busy the bar is) the bartender selects ingredients from the infusion-jar wall and builds a drink. The whole process takes 4 to 7 minutes from arriving to first sip.

The infusion-jar wall

What sits behind the Soluble Solids bar is the actual programme. A row of labelled jars, each holding a spirit infused with one or two ingredients. The rotating selection includes pistachios, ground nuts, apricot, star anise, cloves, pandan, calamansi, gula melaka, bunga kantan (torch ginger), asam boi (salted plum), kaffir lime leaf, cardamom, cinnamon, lemongrass. The bartender pulls from this wall instead of from a back-bar of bottles for most drinks.

EatDrinkKL wrote in 2023 that the bar "infuses tequila, gin, whiskies and other spirits with 'soluble solids' that span pistachios and ground nuts to apricot, star anise and cloves." That description still matches what is on the wall today, though the specific jars rotate every few weeks as some infusions finish and new ones start.

Why the no-menu format works

Three structural reasons:

The bartender can match the actual guest. A printed menu averages across all guests, so the cocktails are calibrated to "what most people will like". A no-menu format calibrates each drink to the specific guest at the counter. The same gin sour built for a guest who likes citrusy-herbal is materially different from the same template built for a guest who likes citrusy-floral; both are correct, both are different, both are impossible from a fixed menu.

The infusion wall stays fresh. Because there is no menu locking the bar to specific recipes, the bartender can rotate infusions every few weeks. This week pistachio-infused tequila is on the wall; next week it might be replaced by a calamansi-infused mezcal. The drinks naturally evolve through the year.

The first 30 seconds becomes a conversation. Ordering a cocktail at a no-menu bar is itself a small ritual: the three questions, the bartender's quick recommendation, the build in front of you. This is genuinely a different evening format than handing a menu across the counter. It works particularly well for dates and small groups where the order conversation becomes part of the atmosphere.

What to do if you have never been to a no-menu bar

Walk in. Sit at the counter if possible. Tell the bartender it is your first time and you do not know how this works. They will walk you through the three questions and build the first drink while explaining what they are doing.

Do not stress about getting the answers "right". There are no wrong answers. If you say "light, gin, citrusy" and the drink that arrives is not quite what you wanted, tell the bartender; the second round will be calibrated based on the feedback. This is the format working as designed.

If you have a hard preference (you really do not like an ingredient, you have an allergy, you are pregnant and need zero-proof), say so at the start. The bartender will work around it.

Pricing at a no-menu bar

Most drinks at Soluble Solids land between RM 32 and RM 40. Specific premium-spirit builds may run higher; the bartender will note the price before pouring if a drink is above the standard band. There is no surprise billing.

A two-person evening with three drinks each and shared snacks typically lands at RM 250 to RM 360 all in. Cheaper than a comparable evening at a KLCC rooftop bar; comparable to other serious PJ cocktail bars.

Reservations and walk-ins

Walk-ins welcome most evenings, though the room is small (14 seats). WhatsApp ahead for Friday or Saturday after 20:00, or for any group of 4 or more.
