How it tastes

Whisky and amaretto give the warm body of a classic Godfather. The espresso adds bitterness and weight; the coffee liqueur extends the espresso's sweetness without sugar. Drinks slow. Ages well in the glass. We've had people order this and stay an extra hour without ordering anything else.

Why we built it

The Godfather (whisky and amaretto) is one of those classics that benefits from gentle modernisation. Espresso was the easiest, most coherent addition. The drink stays in the same family but gains depth.

What glass is the Irish Godfather served in?

A rocks glass with one large ice cube. Short and heavy. The single rock holds the cold while the drink develops over 15 to 20 minutes, and the espresso's crema sits on the surface where the nose can find it. A coupe loses the big-rock pacing that this drink is built around.

Can I substitute the Irish whiskey?

Yes. Any soft, lightly peated or unpeated whisky works. A blended Scotch (Famous Grouse, Monkey Shoulder) is the common swap. Bourbon gives a sweeter, vanilla-led version. A heavy peated Islay like Laphroaig overwhelms the espresso. Japanese blended whiskies sit well with the coffee and the amaretto. The key is gentle, not aggressive.

How strong is the Irish Godfather?

Around 22 to 26 percent ABV in the glass after shaker dilution and the big-rock melt. The espresso adds caffeine but also volume, which lengthens the drink without dropping its strength too far. Built as an after-dinner pour. One is satisfying; two and you'll be wide awake at midnight.

What food pairs with the Irish Godfather?

Dark chocolate at 70 percent or above is the obvious pairing. Tiramisu, affogato, panna cotta. Salted caramel desserts. A cheese plate with aged comté or a runny taleggio. For Malaysian context, kuih lapis with its layered sweetness or a slice of pandan chiffon cake. Avoid anything fresh or citrus-led; the drink wants depth, not lift.
