How it tastes

Pear softens the gin and lets the juniper sit gently underneath. Lime keeps everything bright. Elderflower adds the floral lift on the finish. Drinks dry, not sweet, despite the fruit. We've found this is one of the easiest crowd-pleasers when someone says "I don't usually like gin".

Why we built it

The classic gimlet is gin and lime cordial. Beautiful but unforgiving. Adding fresh pear gives the drink rounded body without losing the gimlet shape. Elderflower is the small bridge between the pear and the gin's botanicals. The whole drink reads as a more grown-up version of a fruit-forward cocktail.

What glass is the Pyrus Gimlet served in?

A chilled coupe at Dissolved Solids. The drink is shaken hard for 12 to 15 seconds, then double-strained up. A thin pear slice or an expressed lime cheek garnishes. The coupe shape gives the pear puree room to settle on the surface; a Nick & Nora glass works as an alternative.

Can I substitute the pear in a Pyrus Gimlet?

Fresh white peach puree gives you a different drink in the same family. Apple puree reads heavier and less floral. Bartlett pear is the textbook choice; Asian pear is too watery and loses the body. Elderflower liqueur (St-Germain) substitutes well for elderflower cordial at half the volume. Gin can be swapped for a contemporary citrus-forward gin, but the juniper-led London dry is what makes it read as a true gimlet.

How strong is the Pyrus Gimlet?

Around 22 to 25 percent ABV in the finished drink. The build is 50ml gin (around 40 percent) plus 10ml elderflower liqueur (around 20 percent) against 20ml pear puree, 15ml lime, and 5ml syrup, shaken with ice dilution. The pear softens the gin perception and the lime keeps it dry. It drinks lighter than the number suggests.

What food pairs with the Pyrus Gimlet?

Light and savoury. Cheese boards with hard cheese (manchego, comte, parmesan), prosciutto, fig jam. Also strong with raw seafood: oysters, sashimi, ceviche. The pear-and-elderflower softness handles delicate flavours that would get crushed by a Negroni. Skip with very spicy food; the floral notes get lost under chilli.
