How it tastes

Bitter espresso up front, the grapefruit cuts in mid-palate, then the honey and mango wrap the finish in something almost floral. The smoked herb is the part that surprises people. It hits before the first sip, then keeps showing up in the nose between sips. We've found this is a good gateway for people who don't usually order non-alcoholic drinks.

Why we built it

This sits in our Crafted Beverages section, which is the non-alcoholic side of the menu. We've come to think a good mocktail should not feel like a cocktail with the alcohol subtracted. Black Honey was an attempt at a savoury, complex pour that earns its place on a menu without any spirits at all. Pink grapefruit was the unlock. It bridges the bitter coffee and the soft honey without either dominating. More on our mocktail philosophy here.

Frequently asked questions

What glass is the Black Honey served in?

A chilled coupe or short rocks glass, double-strained, with the smoked herb sprig perched so the smoke rises into the nose. Coupe is the photogenic choice; rocks gives more length when topped with soda. A highball loses the smoked aromatic, which is the whole drink's signature.

Can I substitute the pink grapefruit?

Yes. Pomelo (locally available across PJ markets) gives a softer, less acidic citrus that works well. Yellow grapefruit reads sharper and more bitter. Calamansi is too small to use as a primary citrus here; the volume needed would push the drink too sour. Stick to a pink or pomelo for the closest profile to the house version.

How strong is the Black Honey?

Zero alcohol. Completely non-alcoholic. The espresso provides a caffeine kick (about 60 to 80mg per serving), which is the only stimulant in the glass. Safe to drive after; not safe to drink right before bed. Children can technically have it though the bitter-savoury profile may not appeal.

What food pairs with the Black Honey?

Brunch food and smoked dishes. Salmon bagel, avocado toast, smoked duck, grilled-cheese with caramelised onion. Also bridges to chocolate desserts (especially dark chocolate with citrus). The coffee body holds up to fatty foods. Avoid milky or sweet drinks alongside; the smoked herb wants room to breathe.
